Pumpkin Pie Parfait Recipe

Not only is this Pumpkin Pie Parfait recipe seasonally appropriate and suspiciously decadent, it packs an antibiotic punch as pumpkin is a superfood in disguise!

INGREDIENTS:

1/4 cup plain pumpkin purée (fresh or canned)

1/2 large frozen banana

1 to 1 1/2 cups almond milk

1 tbsp chia seeds

1/4 tsp cinnamon

1/4 tsp pumpkin pie spice

Graham crackers (for optional topping)

INSTRUCTIONS:

  1. Blend all ingredients in a blender, adding the almond milk as you go until reaching the desired consistency.
  2. Pour into glass and top with desired toppings!

If you’re planning on sharing this at a party, increase the portion sizes appropriately and get ready to knock the socks off your guests!  All in all, these parfaits are a delicious and nutritious way to reward yourself after a long day.
